Shiitake is one of the most popular edible mushrooms (the second most cultivated after champignons), which also has functional properties. It belongs to the genus Lentinula of the Marasmiaceae family. The most common Japanese name is "shiitake", which means "castanopsis mushroom", that is, one that grows on the logs of the "shii" tree or Castanopsis cuspidataa. In China, it is called xiang gu (fragrant mushroom). There are names such as "oak mushroom", "black forest mushroom", "winter mushroom", "flower mushroom", "imperial shiitake mushroom", etc.

In its natural habitat, the Japanese shiitake mushroom grows in the forested regions of Southeast Asia with warm, humid climates. The mycelium develops on logs of shea, oak, hornbeam, beech and other hardwoods. Cultivation of the mushroom for culinary purposes has been carried out at least since 1209. Shiitake now occupies about 25% of the market for industrially grown edible mushrooms.

Useful composition of shiitake

The Chinese shiitake mushroom is one of the most common medicinal plants in traditional Chinese, Japanese and Korean medicine. Official science is also studying the possibilities of using this raw material due to the large number of biologically active components that the fruiting bodies and mycelium of shiitake contain. These include:

  • Lentinan - beta-glucan, which is isolated from shiitake, has been studied in a large number of medical studies as an immunomodulatory component and anticancer agent that inhibits the growth of tumor cells (especially in patients with tumors of the gastrointestinal tract). You can also buy lentinan for the prevention of viral and bacteriological diseases, since this component has shown the corresponding effects in studies;
  • other beta-glucans - polysaccharides with potentially active immunostimulating, immunomodulating effects on the body, antioxidant properties, and benefits for the gastrointestinal tract;
  • eritadenine - a purine found only in shiitake mushrooms and has cholesterol-lowering activity;
  • The LEM fraction isolated from the mycelium, which contains a complex of proteins, beta-glucans and vitamins (including ergosterol), has effects similar to those of lentinan;
  • Dietary fiber - helps maintain normal intestinal microflora, helps lower cholesterol levels and prevents vascular sclerosis.
