Description of chanterelle mushroom (Cantharellus Cibarius)
Chanterelle is an edible mushroom of the Cantharellus family with fruiting bodies that have a bright orange wavy cap that turns into a stem. The well-recognizable species has a fruiting body height of up to 10 cm and a diameter of up to 10 cm, with a faint "apricot" aroma. Chanterelle grows in mixed and coniferous forests under oaks, beeches, pines and other trees, forming mycorrhiza with them (symbiosis of the mycelium and the root system of the tree).
The species, widely distributed in Europe, has the mycological name C. cibarius sensu stricto, growing from the Mediterranean to Scandinavia. C. cibarius has closely related species C. anzutake in Asia and C. cibarius var. roseocanus, C. californicus and several other species in North America. All of these species have been taxonomically separated through DNA structure analysis.
Chanterelle is widely consumed in fried and boiled form, and is also prepared by pickling, freezing, gentle drying (without using an oven, in which the mushroom becomes bitter). The medicinal mushroom is also used in folk medicine, and is also considered in evidence-based science as a promising raw material for extracting components for treatment and support of the body.

- proteins - 16-26%;
- fats - 1.9-2.6%;
- dietary fiber - up to 65% (including up to 27% beta-glucans);

- magnesium (up to 120 mg/100 g), iron (up to 50 mg/100 g), potassium (up to 5900 mg/100 g), calcium (up to 57 mg/100 g), copper (5.5 mg/100 g), phosphorus (up to 657 mg/100 g);
- vitamins: B1, B2, B3, B9, D2
- essential amino acids.
Chanterelles contain an increased amount of the monosaccharide mannose (8.5 g/100 g). Its D-mannose form is practically not metabolized in the body and is excreted in the urine, which, combined with the antibacterial properties of this compound, helps prevent recurrent urinary tract infections.
Ergosterol is another active component of chanterelles, which helps cleanse the liver and is considered an active supplement in cases of hepatitis, hemangiomas, fatty liver disease; its benefits for the kidneys are also noted.
